Estelle Pillow is Connie Thompson’s younger sister (the one she talks to on the phone all the time in More Things in Heaven in Earth.) Well, in Each Shining Hour, she is moving back to Watervalley and believe you me…she is large and in charge. She has a PhD in chemistry, a non-stop, effervescent personality, and a love of spandex. Connie thinks genetics took a holiday when Estelle was born. How could they possibly be sisters?

But one thing is for sure… Estelle knows how to cook! So this month’s recipe is her fabulous corn salad, just in time for some July 4th celebrating. Spice it up with a little cayenne pepper if you like and happy eating!


3 cups fresh cut corn (use frozen/thawed if necessary… but shame on you)

3/4 cup diced, unpeeled cucumber

1/4 cup diced red onion

1- 1 1/2 cups halved cherry tomatoes

1/4 sour cream

2 T. mayonnaise

1 T. vinegar

1/2 tsp. salt

1/4 tsp dry mustard

pinch of sugar to taste

fresh herbs (thyme, rosemary, or basil… or heck, all three)


COMBINE corn, cucumber, onion and tomatoes.  Blend remaining ingredients and add to corn mixture.

Toss to coat vegetables and chill.

6-8 servings

Optional-add black beans and mix in a little extra dressing.
